At the time when the olive presses were in operation, the young men who worked there —the triatori— would improvise fifteen-syllable couplets to make their work easier and more enjoyable. They sang them in a rhythm that matched their movements as they turned the huge stone cylinder under which the olives were crushed. These were the frabika songs, and they were not only about the olive presses and the triatori, but also about many other subjects.
The triatori sang these improvised songs on various occasions, often inspired by everyday incidents. Songs to the same tune were also sung by the young women whose sweethearts worked in the olive presses. Through these songs, the triatori released the tension of their labor, as the singing had a soothing effect on them and served as a form of emotional catharsis.
